My suspicion is that cutting off the ear is not so much a form of torture but rather a form of future identification. The other tortures are not for identification. If your ear is missing it will show up in pictures. It is immediately noticed if you talk to someone. Yes, I believe identification is the purpose for cutting off ears. During the Holocaust people were tattooed but tattoos are time consuming and can be hidden. Ears are very obvious.
